Fantasy Fudge

FANTASY FUDGE

3 c sugar
1 pkg chocolate chips
1 1/2 sticks butter
1 jar (7 oz) marshmallow creme
2/3 c evaporated milk
1 tsp vanilla

Spray 9-inch pan with non-stick cooking spray; set aside. In large heavy saucepan, combine butter, sugar & evaporated milk. Bring to full rolling boil on medium heat, stirring constantly. Boil exactly 4 minutes or until candy thermometer reaches 234 F, stirring constantly to prevent scorching. Remove from heat.
Add chocolate chips & marshmallow creme; stir until completely melted. Stir in vanilla.
Options: use any kind of chips (white chocolate, butterscotch, peanut butter, etc.). Chopped walnuts are good too.
Pour immediately into prepared pan; spread to form even layer. Let stand at room temperature 4 hours or until completely cooled. (I stick it in the freezer for about 5 minutes b/c my boys couldn't wait 4 hrs. hehehe)
Cut into 1-inch squares. Store in tightly covered container at room temperature.
Makes 3 lbs or 40 servings (about 2 squares each).
