Dena's Banana Bread

Dena's Banana Bread

Ingredients:

3 ½ cups whole wheat flour

4 tsp baking powder

1 ½ tsp salt

½ tsp baking soda

4-5 bananas (RIPE) – smashed

1 cup milk

1 cup applesauce

2-3 tsp vanilla

1 cup Splenda brown sugar blend

4 eggs

1 ½ tsp cinnamon

1 cup chopped pecans (optional)

PAM/Cooking spray

Preheat oven to 350*

Cream together bananas, brown sugar, eggs, spices.

In a separate bowl whisk together the flour, baking powder, salt, baking soda. Add gradually to wet blend in mixer, stir until just mixed adding in pecans at the end.

Divide batter evenly between two sprayed loaf pans. Or you can put all the batter in one bundt pan.

Bake for 75-80 minutes or until golden and a toothpick come out clean.

Great served warm.

**If you want the more traditional route you can substitute 1 cup of vegetable oil for the applesauce and regular brown sugar for the Splenda.
