Hawaiian Luau

One of our sweet friends from Hawaii had us over for dinner on Mother's Day and cooked these recipes for us! They are all delicious!

Palusami (Spinach Coconut casserole)
Ingredients
• 2 (10 ounce) bags fresh spinach
• 1 (12 ounce) can corned beef, broken into pieces
• 2 (10 ounce) cans coconut milk
Directions
1. Preheat the oven to 350 degrees F (175 degrees C).
2. Make a layer of spinach leaves in the bottom of a 9x13 inch baking dish. Sprinkle with some of the corned beef, then keep repeating layers of spinach and corned beef until you run out of spinach. Don't worry about how full the dish is because the spinach will shrink as it cooks. Pour both cans of coconut milk over the dish, pressing the leaves down with a spoon. Cover tightly with a lid or aluminum foil.
3. Bake in the preheated oven for 45 to 55 minutes, or until spinach has completely wilted and the sauce is bubbly. Cool for 10 minutes before serving.

Pani Popo (Coconut Bread)
• 18 Rhodes™ Frozen Dinner Rolls
• 14 ounce can coconut cream or milk
• 1/2 cup sugar
DIRECTIONS
Place frozen rolls in 3 rows of 6 in a sprayed 9x13-inch baking dish. Cover with sprayed plastic wrap and let thaw and rise until double in size. Combine coconut cream and sugar and mix well.
Remove wrap from risen rolls and pour coconut cream mixture over the rolls (try to coat each roll completely as you pour so they will have a consistent color as they bake.) Bake at 350F 30-35 minutes. Note: Coconut cream mixture will thicken as the rolls cool.

Kalua Pig (Hawaiian Roast Pork)

7-8 lb Boston Butt Pork or Pork Shoulder Roast
1 bottle Liquid Smoke Mesquite Flavor
2/3 cup Hawaiian Rock Salt or Kosher salt

Rinse roast with cool water. Pat dry with paper towel. Rub rock salt over entire roast. Place in a large crock pot. Sprinkle ½ bottle of Liquid Smoke over roast. Cook on low for 6-8 hours or until meat falls off the bone. Remove from crock pot. Remove excess fat and bone. Serve with steamed rice.

Also makes great BBQ beef sandwiches. Just omit the liquid smoke and add your favorite BBQ sauce after cooking.

Kalbi (Grilled beef short rib) Recipe

Ingredients:
16 * Beef Short Ribs or London Broil sliced 1/3-1/4” works too.
1 cup soy sauce,
3/4 cup sugar,
1/2 cup water
2 tablespoons minced garlic
4 tablespoons sesame oil
1 tablespoon ground pepper
1 tablespoon ginger - optional

Wash meat with cool water. Soak in water for 1 hour to loosen any bone fragments left from the cutting, drain. Mix soy sauce, sugar, water and remaining ingredients, stir. Marinate beef for 4 or overnight is best. They cook fairly fast on a hot grill or on broil, 2-3 minutes on one side.
